I'm not a huge fan of cooking but when I feel adventurous, I enjoy trying some new recipes...
The following is one of them (for 2p):
Ingredients :
2 whole sea bream, cleaned and gutted
1 pack of risotto rice
1 courgette
1 mango
1 lemon
2 vanilla sticks
1 sachet of vanilla sugar
skimmed milk (or rice/almond milk)
white wine
curry
olive oil
+ prawns if you want to add one on top of your risotto
Directions :
Heat the oven to 200°C/180°C
Put olive oil and lemon juice to cover the bottom of your dish
Put water in a saucepan (3cm high) and bring to the boil (add a pinch of salt)
Then put the risotto rice in it
The rice is going to absorb the water
so you can add some more and alternate with 10cl of white wine everytime
Cut the courgette in very thin slices
Put it into the saucepan with the risotto on a low heat (around 20/30 minutes)
Then add curry (at your conveniance)
At the same time
Put half of a glass of milk in a pan
Add 2 teaspoons of vanilla sugar
And vanilla sticks
Lay the fish into the dish
Baste it with the vanilla sauce (not all of it)
And bake for 20-25 min
(Fish is done when the dorsal fin can easily be removed)
Give a regular stir to the risotto
And baste the fish once or twice so it won't dry
Cut the mango in small squares
When fish and risotto are ready
Serve them into a flat plate
Add the vanilla sauce and mango squares
Dinner's ready, you can enjoy it with the rest of your bottle of wine ! Watch out fishbones and "Bon appétit !"
